Ingredients

  • 4 medium unpeeled zucchini squash
  • 1/4 lb. Italian sausage
  • 1/4 cup chopped onion
  • 1/4 cup soda cracker crumbs
  • 1 slightly beaten egg
  • garlic to taste
  • parmesan cheese

Instructions

  • Cook squash till tender, 10 minutes.
  • Drain & cool.
  • Cut zucchini in half, lengthwise.
  • Scoop pulp out, leaving 1/4" rim.
  • Chop pulp.
  • Brown sausage, drain; add pulp & other ingredients.
  • Fill shells, put in greased pan.
  • Sprinkle with parmesan & extra cheese.
  • Bake 350° uncovered for 25 minutes.
