  • 5 1/2 Cup grated zucchini
  • 6 Cups sugar
  • 1 Cup water
  • 2 Tbsp. lemon juice
  • 1 20 oz. Can crushed pineapple
  • 2 3 oz. each Packages Jello ((any flavor))


  • Boil 6 minutes zucchini, sugar, and water.
  • Add lemon juice and pineapple.
  • Boil 6 minutes more.
  • Add two 3 ounces each packages Jello.
  • Boil 6 minutes more.
  • Pour hot mixture into jars, put lid and screw band.
  • Jars will seal without processing if you put on lids immediately after you pour hot mixture.
