Veal Scallopini


Ingredients
- 2 lb. veal cut into serving pieces
- 1 tbsp. butter
- 1 small onion minced
- 1 clove garlic minced
- 1 lb. mushrooms (cooked and sliced)
- 1 tsp. parsley
- 1 bay leaf crumbled
- 1 cup Marsala
- 1 cup stock (substitute beef consomme)
Instructions
- Dredge veal in flour.
- Pound flour into.
- Fry in butter until golden brown.
- Set aside.
- Melt tablespoon of butter in pan.
- Add onion and garlic, brown lightly and add mushrooms.
- Simmer approx. 2 minutes.
- Add other ingredients and simmer approx. 20 minutes.
- Add veal and simmer another 20 minutes.
- Serve with fettucini and a crisp salad.
