Veal Scallopini

Ingredients

  • 2 lb. veal cut into serving pieces
  • 1 tbsp. butter
  • 1 small onion minced
  • 1 clove garlic minced
  • 1 lb. mushrooms (cooked and sliced)
  • 1 tsp. parsley
  • 1 bay leaf crumbled
  • 1 cup Marsala
  • 1 cup stock (substitute beef consomme)

Instructions

  • Dredge veal in flour.
  • Pound flour into.
  • Fry in butter until golden brown.
  • Set aside.
  • Melt tablespoon of butter in pan.
  • Add onion and garlic, brown lightly and add mushrooms. 
  • Simmer approx. 2 minutes.
  • Add other ingredients and simmer approx. 20 minutes. 
  • Add veal and simmer another 20 minutes.
  • Serve with fettucini and a crisp salad.
