Six-Week Muffins

Ingredients

  • 1 - 15 oz. box raisin bran (7 cups)
  • 1 cup melted shortening
  • 3 cups sugar
  • 4 eggs - beatin
  • 1 qt. buttermilk
  • 5 cups sifted flour
  • 5 tsp. soda
  • 2 tsp. salt

Instructions

  • Mix bran, sugar, flour, soda and salt in a very large bowl.
  • Add beaten egg, shortening and buttermilk.
  • Mix well, store in refrigerator.
  • For muffins, fill greased tins, 2/3 full and bake in preheated oven 400 degrees - 15-20 minutes.
  • Batter will keep for 6 week in refrigerator. 
  • You can mix 2 bananas in with 1/4 recipe.
