Ingredients

  • 1/2 Cup rice (uncooked)
  • 4 Cups milk
  • 4 eggs
  • 3/4 Cup sugar
  • 1/2 Tsp. salt
  • 1 1/2 Tsp. vanilla
  • Dash of nutmeg
  • 1/2 Cup raisins (optional)

Instructions

  • Cook milk and rice together in a double boiler for about 1 hour or until tender.
  • Stir often.
  • Beat eggs, add sugar and salt.
  • Mix well.
  • Add to rice and milk mixture.
  • Cook 2-3 minutes or until thickened.
  • Add vanilla and nutmeg.
  • Mix well.
  • Add raisins.
  • Cool in a glass dish.
  • Makes almost 2 quarts.
