Rice Pudding


Ingredients
- 1/2 Cup rice (uncooked)
- 4 Cups milk
- 4 eggs
- 3/4 Cup sugar
- 1/2 Tsp. salt
- 1 1/2 Tsp. vanilla
- Dash of nutmeg
- 1/2 Cup raisins (optional)
Instructions
- Cook milk and rice together in a double boiler for about 1 hour or until tender.
- Stir often.
- Beat eggs, add sugar and salt.
- Mix well.
- Add to rice and milk mixture.
- Cook 2-3 minutes or until thickened.
- Add vanilla and nutmeg.
- Mix well.
- Add raisins.
- Cool in a glass dish.
- Makes almost 2 quarts.
