Rhubarb Custard Pie

  • 3 egg yolks (lightly beaten)
  • 1/4 Cup Half and Half
  • 1/2 Cup sugar
  • 1 Tsp. flour
  • 1/8 Tsp. salt
  • 4 Cups rhubarb (cut up)
  • 1 unbaked 9-inch pie shelf and margarine


  • Preheat oven to 375°.
  • Mix egg and cream.
  • Add sugar, flour, salt, and rhubarb.
  • Mix thoroughly.
  • Pour into shell.
  • Bake until set about 1 hour.
  • Top with margarine.
