Rhubarb Bread

Ingredients

  • 1 1/2 cup brown sugar
  • 2/3 cup liquid shortening
  • 1 cup milk
  • 1 tsp salt
  • 1 tsp soda
  • 1 tsp vanilla
  • 2 1/2 cup flour
  • 1 1/2 cup finely diced rhubarb
  • 1/2 cup chopped nuts

Instructions

  • Combine all ingredients and mix well.
  • Pour into 2 greased bread loaf pans filling 1/2 full.
  • Cover with topping and bake 30-40 minutes or until toothpick inserted in center comes clean.
  • Cool on racks before slicing.

Topping:

  • 1/2 cup sugar & 1/2 tsp cinnamon 1 tbsp butter or margarine.

Notes

Makes 2 loaves.
