Peanut Butter Pie


Ingredients
- 1 baked 9-inch pie shell
BOTTOM LAYER:
- 1 Cup powdered sugar
- 1/3 Cup creamy peanut butter
FILLING:
- 1/4 Cup cornstarch
- 2/3 Cup sugar
- 1/4 Tsp. salt
- 2 Cups scalded milk
- 3 egg yolks (beaten)
- 1/4 Tsp. vanilla
TOPPING:
- 3 egg whites (beaten)
Instructions
For Bottom Layer:
- Mix powdered sugar and peanut butter until like cornmeal.
- Spread 1/2 of this mixture in bottom of baked pie shell.
For Filling:
- Combine cornstarch, sugar, salt, scalded milk, and beaten egg yolks.
- Cook until thick.
- Add vanilla and spread over peanut butter layer in pie crust.
For Topping:
- Beat egg white.
- Spread over pie filling and sprinkle with rest of peanut butter mixture over egg whites.
- Bake until light brown, 20 minutes.
