Peanut Butter Pie

Ingredients

  • 1 baked 9-inch pie shell

BOTTOM LAYER:

  • 1 Cup powdered sugar
  • 1/3 Cup creamy peanut butter

FILLING:

  • 1/4 Cup cornstarch
  • 2/3 Cup sugar
  • 1/4 Tsp. salt
  • 2 Cups scalded milk
  • 3 egg yolks (beaten)
  • 1/4 Tsp. vanilla

TOPPING:

  • 3 egg whites (beaten)

Instructions

For Bottom Layer:

  • Mix powdered sugar and peanut butter until like cornmeal.
  • Spread 1/2 of this mixture in bottom of baked pie shell.

For Filling:

  • Combine cornstarch, sugar, salt, scalded milk, and beaten egg yolks.
  • Cook until thick.
  • Add vanilla and spread over peanut butter layer in pie crust.

For Topping:

  • Beat egg white.
  • Spread over pie filling and sprinkle with rest of peanut butter mixture over egg whites.
  • Bake until light brown, 20 minutes.
