Ingredients

  • 1 quart oysters
  • 1/2 cup butter
  • 1/2 cup chopped celery
  • 1/2 cup chopped green onion
  • 1/4 cup chopped parsley
  • 2 pkgs. 10 oz. each frozen chopped spinach defrosted
  • 2 tbsp. anisette
  • 1/2 tsp. salt
  • 1/2 cup dry bread crumbs
  • 2 tbsp. melted butter
  • rock salt
  • oyster shells or ramekins

Instructions

  • Drain oysters, cook celery, green onion, parsley in butter 5 minutes or till tender, add spinach anisette, salt.
  • Place in blender and whirl until almost pureed.
  • Place shells or ramekins on rock salt in shallow pans.
  • Place oysters in shells or ramekins.
  • Top each oyster with spinach mixture.
  • Combine bread crumbs and 2 tbsp. melted butter. 
  • Sprinkle over oysters.
  • Bake 450° for 10 min.
