Mom's Potato Soup

Ingredients

  • 8 med sized potatoes
  • 1 onion (diced)
  • 4 tbsp butter or margerine
  • 2 cups whole milk
  • salt & pepper to taste.

Instructions

  • Peel, chop & boil potatoes; cook until soft, but firm.
  • Drain water from potatoes. milk onion, butter, salt & pepper. 
  • Add 1/2 to 1/4 cup water; simmer for 1/2 hour.
  • May need to add more water after 1/2 hour is up. 
  • Try not to over cook until potatoes are mushy. 
  • Serve with oyster crackers or croutons.
