Herb Roasted Lamb

Ingredients

  • 1 leg of lamb trimmed
  • 1/2 tsp. garlic slivers
  • 1 tsp. salt
  • 1/2 tsp. coarsely ground black pepper
  • 1/22 tsp. ground ginger
  • 1 bay leaf crumbled
  • 3/4 tsp. thyme
  • 1/2 tsp. sage
  • 1/2 tsp. marjoran
  • 1 1/2 tbsp. soy sauce
  • 1 tbsp. vegetable oil

Instructions

  • Preheat oven to 300 degrees.
  • Cut small slits in the lamb and insert garlic slivers with tip of knife.
  • Combine remaining ingredients and rub thoroughly over and into the meat. 
  • Roast on a rack in a roasting pan, uncovered.
  • Cook 18 minutes per round for medium.
  • Let stand 20 minutes before carving.
