  • 2 8 oz. Packages cream cheese
  • 3/4 Cup sugar
  • 2 eggs
  • Box vanilla wafers
  • 1 Tsp. vanilla
  • 1 Tbsp. lemon juice
  • 1 Can fruit pie filling


  • Put a vanilla wafer in bottom of foil cupcake paper.
  • Mix cream cheese, sugar, eggs, vanilla, and lemon juice.
  • Fill cupcake papers 3/4 full with cream cheese mixture.
  • Bake 10 minutes in 375° oven.
  • Top with fruit pie filling, any flavor.
  • Makes 30 tarts.
