Ingredients

  • 1 Cup white sugar
  • 1 Cup brown sugar
  • 1 Cup shortening
  • 3 eggs
  • 1/4 Tsp. salt
  • 1 Tsp. soda
  • 4 Cups flour
  • 1 Tsp. vanilla

Instructions

  • Boil 1 lb. chopped dates, 3/4 cup sugar, and 1 cup hot water.
  • Let cool.
  • Add 1/2 cup nutmeats chopped.
  • Cream sugar and shortening.
  • Add well beaten eggs and mix well.
  • Dissolve soda in 2 tbsp. hot water and add to sugar, etc.
  • Add vanilla.
  • Put the salt in flour and sift into batter a little at a time.
  • Mix well.
  • Divide the cookie dough into 2 equal parts and roll each part into a rectangle shape 1/4-inch thick.
  • Spread the cooled date filling over the 2 rectangles.
  • Roll up as a jelly roll.
  • Place in pan and chill 3 hours or overnight.
  • Slice In 3/8-inch slices.
  • Bake at 350° for 20 minutes.
