Cut flank, steak in thin strips across grain.
Cut tomatoes in quarters.
Trim away seeds and ribs from peppers and cut in big chunks.
Heat oil in large skillet.
Add strips of beef, crushed garlic, salt, pepper and ginger.
Fry over high heat until brown on all sides.
Season with soy sauce and sugar.
Cover tightly and cook slowly for 5 minutes.
Al this point loss in tomatoes, peppers and drained and rinsed bean sprouts.
Bring to boil and cook briskly 5 minutes.
Make paste of cornstarch and water.
Add to beef mixture and cook until thickened slightly.
Stir occasionally. Makes 6 servings.
