Flank Steak & Peppers


Ingredients
- 6 Pounds flank steak
- 2 green peppers
- 2 Tbsp. olive or salad oil
- 1 Tsp. salt
- 1/4 Cup soy sauce
- 1 1 pounds Can beans sprouts
- 2 to matoes
- 1 clove garlic
- Dash of pepper
- 1/4 Tsp. ground ginger
- 1/2 Tsp. sugar
- 1 Tbsp. cornstarch
- 1/4 Cup water
Instructions
- Cut flank, steak in thin strips across grain.
- Cut tomatoes in quarters.
- Trim away seeds and ribs from peppers and cut in big chunks.
- Heat oil in large skillet.
- Add strips of beef, crushed garlic, salt, pepper and ginger.
- Fry over high heat until brown on all sides.
- Season with soy sauce and sugar.
- Cover tightly and cook slowly for 5 minutes.
- Al this point loss in tomatoes, peppers and drained and rinsed bean sprouts.
- Bring to boil and cook briskly 5 minutes.
- Make paste of cornstarch and water.
- Add to beef mixture and cook until thickened slightly.
- Stir occasionally. Makes 6 servings.
