Ingredients

  • 6 Pounds flank steak
  • 2 green peppers
  • 2 Tbsp. olive or salad oil
  • 1 Tsp. salt
  • 1/4 Cup soy sauce
  • 1 1 pounds Can beans sprouts
  • 2 to matoes
  • 1 clove garlic
  • Dash of pepper
  • 1/4 Tsp. ground ginger
  • 1/2 Tsp. sugar
  • 1 Tbsp. cornstarch
  • 1/4 Cup water

Instructions

  • Cut flank, steak in thin strips across grain.
  • Cut tomatoes in quarters.
  • Trim away seeds and ribs from peppers and cut in big chunks.
  • Heat oil in large skillet.
  • Add strips of beef, crushed garlic, salt, pepper and ginger.
  • Fry over high heat until brown on all sides.
  • Season with soy sauce and sugar.
  • Cover tightly and cook slowly for 5 minutes.
  • Al this point loss in tomatoes, peppers and drained and rinsed bean sprouts.
  • Bring to boil and cook briskly 5 minutes.
  • Make paste of cornstarch and water.
  • Add to beef mixture and cook until thickened slightly.
  • Stir occasionally. Makes 6 servings.
