Family Favorite Meatballs


Ingredients
- 1 Can tomato soup (reserve half)
- 1 Pound ground beef
- 1/4 Cup uncooked rice
- 1 egg (slightly beaten)
- 1/4 Cup minced onion
- 2 Tbsp. minced parsley
- 1 Tsp. salt
Instructions
- Shape into balls about 1 1/2-inches in diameter.
- Brown in 2 tbsp. shortening with 1 small garlic clove.
- Blend in rest of soup and 1 cup water.
- Cover and simmer about 40 minutes or until rice is tender, stirring now and then. Serves 4.
