Cream Rhubarb Pie

  • 1 unbaked pie crust
  • 2 egg yolks
  • Salt
  • 2 Tbsp. flour
  • 1 Cup sugar
  • 1 Cup cream (Half and Half)
  • 2 egg whites
  • Rhubarb
  • 6 Tbsp. sugar


  • Fill pie crust with cut up rhubarb.
  • Mix egg yolks, flour, sugar, salt, and cream.
  • Pour over rhubarb.
  • Bake at 350° until done.
  • Make meringue with egg whites and sugar.
  • Put on pie and bake until meringue is light tan.
