Cranberry Fruit Bread

Ingredients

  • 2 cups sifted flour
  • 1 cup sugar
  • 2 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 cup Wheat Chex crushed to 1/2 cup
  • 1/3 cup raisins coarsely chopped
  • 1 egg well beaten
  • 2 tbsp. oil
  • 1/3 cup orange juice
  • 1 1/2 tbsp. grated orange peel
  • 1 cup drained whole cranberry sauce

Instructions

  • Preheat oven to 350°.
  • Grease 9 x 5 x 2 loaf pan.
  • Sift together flour, sugar, baking powder, salt, soda, and spices.
  • Stir in Wheat Chex crumbs and raisins.
  • Combine egg, oil, orange Juice, orange peel and cranberry sauce.
  • Add to dry ingredients, stirring until just moistened. 
  • Bake 50-55 minutes or until done.  
  • Cool 15 minutes before removing from pan.
