Chillies Rellenos Jose


Ingredients
- 1 can 1# 10 oz. whole green chillies
- 1 lb. monterey jack cheese cut 1/4" thick by 1" x 3"
- 1/2 lb. cheddar cheese - grated
- 5 large eggs
- 1/4 cup milk
- 1/2 tsp. salt
- clack pepper
- liquid red pepperto
- paprika
Instructions
- Rinse seeds from chilies with cold water.
- Spread on paper towel, Pat to dry.
- Slip piece of monterey jack cheese into each chili.
- Beat eggs then gradually add flour, beat smooth.
- Add milk salt, pepper and pepperto.
- Beat Smooth.
- Arrange half stuffed chili in well, greased 7 X 13 pan.
- Sprinkle with half cheddar cheese and paprika.
- Repeat layer ending with cheese.
- Carefully pour egg mixture over all.
- Bake uncovered at 350° about 45 minutes or until knife inserted between chilies in custard comes out clean.
