  • 1 can 1# 10 oz. whole green chillies
  • 1 lb. monterey jack cheese cut 1/4" thick by 1" x 3"
  • 1/2 lb. cheddar cheese - grated
  • 5 large eggs
  • 1/4 cup milk
  • 1/2 tsp. salt
  • clack pepper
  • liquid red pepperto
  • paprika


  • Rinse seeds from chilies with cold water. 
  • Spread on paper towel, Pat to dry. 
  • Slip piece of monterey jack cheese into each chili.
  • Beat eggs then gradually add flour, beat smooth.
  • Add milk salt, pepper and pepperto.
  • Beat Smooth.
  • Arrange half stuffed chili in well, greased 7 X 13 pan. 
  • Sprinkle with half cheddar cheese and paprika.
  • Repeat layer ending with cheese. 
  • Carefully pour egg mixture over all. 
  • Bake uncovered at 350° about 45 minutes or until knife inserted between chilies in custard comes out clean.
