Chili Rellenos

  • 1 dozen eggs
  • salt
  • pepper
  • 1/2 cup flour
  • pinch of baking powder
  • touch of half and half
  • chopped onions if desired
  • 1 pound monterey jack
  • pound longhorn cheese
  • 5 cans green chilies (whole)


  • Beat eggs til fluffy.
  • Add half and half, salt, pepper, flour, and baking powder.
  • Grate cheese.
  • Put egg mixture sparingly on bottom on 9 x 14 x 2 dish. Add cheese.
  • Split chilies and lay flat, covering cheese.
  • Use less chili if you want it less hot.
  • Layer again: egg mixture, cheese and chilies.
  • End up with cheese and a little egg mixture on top.
  • Bake at 350 degrees for 45 minutes to one hour.
