Ingredients

  • 2 tbsp. olive oil
  • 1 tsp. chopped parsley
  • 1/2 stalk celery chopped
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 1/2 cup Marsala
  • 1 cup stock (substitute beef consomme )
  • chicken cut in serving pieces ((breasts, legs, thighs) )

Instructions

  • Brown chicken in olive oil.
  • Add parsley, celery, garlic, salt and pepper.
  • Simmer 10 minutes.
  • Add bay leaf and wine.
  • Cook slowly until wine almost evaporates.
  • Add stock, cover and simmer 30 minutes or until chicken is tender.
