Chicken Marsala


Ingredients
- 2 tbsp. olive oil
- 1 tsp. chopped parsley
- 1/2 stalk celery chopped
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 bay leaf
- 1/2 cup Marsala
- 1 cup stock (substitute beef consomme )
- chicken cut in serving pieces ((breasts, legs, thighs) )
Instructions
- Brown chicken in olive oil.
- Add parsley, celery, garlic, salt and pepper.
- Simmer 10 minutes.
- Add bay leaf and wine.
- Cook slowly until wine almost evaporates.
- Add stock, cover and simmer 30 minutes or until chicken is tender.
