Boston Baked Beans


Ingredients
- 1 Quart beans
- 1 small onion
- 1/4 Pound side pork or bacon (cut in pieces)
- 1/2-1 Tbsp. salt
- 3-4 Tbsp. brown sugar
- 1/2 Tbsp. mustard
- 3 Tbsp. catsup
- 3-4 Tbsp. molasses (Brer Rabbit)
- 1 Cup hot water
Instructions
- Wash and soak beans in cold water overnight.
- In the morning drain, cover with fresh water and cook slowly until skins break.
- Drain.
- Place onion in bottom of earthenware bean pot.
- Pour in beans.
- Add meat.
- Mix seasonings and hot water together.
- Add molasses and hot water mixture.
- Cover bean pot and bake in slow oven for 6-8 hours.
- Add water from time to time when necessary.
- Bake uncovered the last hour.
